Management software for artisan bakeries: batches, unsold goods and HACCP records
A compliant till remains mandatory and a homebuilt tool must never take customer payments. Everything else, planned batches, unsold goods, holiday orders and hygiene records, still lives in notebooks. That is where your own software has room.
Artisan bakery management software starts at €29 monthly with Tactill, limited to one till and 300 products, and reaches €49 monthly for SumUp's advanced plan (rates consulted September 2, 2026). The French national bakery-pastry confederation reports around 34,000 bakers/pastry makers for 35,000 outlets without specifying a reference year.
What the till does well, and why it stays
Market tills handle payment collection, payment methods, receipts and statutory archiving, sometimes reaching scheduling and hygiene tracking: JDC and Cashmag both advertise bakery offers without prices. A counter-selling artisan needs this foundation, and no homebuilt tool replaces it. The reason is explicit in tax guidance: BOFiP BOI-TVA-DECLA-30-10-30 paragraph 375 states that ‘when software or a system is developed by the taxable person themselves for their own needs’, compliance can only be justified by an accredited body's certificate. February 2026's relaxation permitting vendor attestations remains closed to self-development. The penalty is €7,500 per system. Retain one rule: commissioned software must never record a private customer's payment.
What artisans criticise about providers
Public reviews target less the hardware than what follows signing. On JDC's Trustpilot listing, rated 1.6 out of 5 from 210 reviews, one customer writes ‘A catastrophe. Customer service is deplorable’ (Dos Santos, 1 star, August 28, 2026), another ‘Non-existent sales contact. No problem when selling us the equipment’ (Fred H., 1 star, August 13, 2026). On Popina, 2.0 from 10 reviews, a professional describes a four-year commitment and billing transferred to a third party, making refunds impossible (Sarah Louveau, 1 star, February 10, 2026). At SumUp, 4.2 from 55,625 reviews, a retailer describes forced migration from Tiller, higher commissions and lost features (Clara M., 1 star, September 1, 2026). The common point: the contract concerns hardware and software follows it.
Five functions missing in the bakery
First, batch planning: quantities per bake from past sales, weekday and public holidays, with manual adjustment before the night starts. Next, an unsold-goods log entered in thirty seconds at day-end by product, giving unsold rates and monthly ingredient costs. Counter or telephone orders for galettes, Christmas logs and worksite sandwiches, with previous-day reminders and production sheets per station. Recipe ingredient costs recalculated when butter prices change on supplier invoices. And night-shift team scheduling alongside HACCP records: temperatures, cleaning and batch traceability, timestamped and exportable for inspection.
The surrounding regulatory requirements
European Regulation 852/2004 Article 5 requires permanent HACCP-based procedures with creation and retention of documents. The official food-business hygiene factsheet adds at least 14 hours' training for one staff member and notification to DDPP before opening. Allergens fall under Articles 9 and 21 of Regulation 1169/2011; non-prepacked food, common in bakeries, under Article 44. Names are constrained too: decree no. 93-1074 of September 13, 1993 defines pain maison, pain de tradition française and pain au levain, making sales labels legal descriptions rather than free catalogue names. Suppliers of flour and packaging already send electronic invoices from September 1, 2026, and you must issue them from September 1, 2027 through an approved platform. Custom software prepares data; the platform carries it. Check your particular situation with your accountant.
The smallest useful stage

Where to start
Open last week's baking notebook and count three figures: products discarded, customer orders recorded outside the till, and temperature readings filled in the following day. These numbers describe your needed tool without computing vocabulary. Describe them to an agent team, read proposed requirements and keep the compliant till where it is.
